With Eyrie, the original Oregon Pinot Gris (from 1978), and for me, still the best. Wonderfully fresh and flavorful, this will develop an almost creamy richness with age. As Dick Ponzi and David Lett managed to convince Northwest restaurants, this is the perfect white wine for salmon.
