For how dark the shade of pink is in the glass, this is a rather tightly wound rosé, starting with aromas of cherry, orange peel and turned earth. The palate is also lighter than expected, showing berry, rose petals and cracked pepper flavors, all clinging to a taut texture.
This 2021 version is lighter in color, but every bit as rich and delicious. But also with a pH of 3.2, it’s VERY fresh and bright.
It’s organic, wild yeast fermented and made from a fascinating blend of Grenache, Mourvedre and Falanghina.
