The 100% Sangiovese Occhio di Pernice bottling of Vin Santo from Bibbiano is one of the very greatest (indeed Forbes said THE greatest) examples of this ultimate and incredibly old school Italian rarity.
The winery says of this:
From the half-barriques of a true “family stock”, a few, precious bottles dedicated to San Lorenzo, patron saint of the Bibbiano Chapel.
Sweetness of almond, hazelnut and dried fruit, full-bodied and elegant; perfect with fois gras, patè and aged cheeses.
They only made 900 half-bottles of this nectar – and the rest of it (at least what they’re not keeping themselves) has all been sold, and at much higher prices.
