Vinous rates this this very special selection of Fleury’s crème de la crème fruit Fleury’s top vintage ever, saying:
The 2012 Extra Brut Sonate is made from 78% Pinot Noir and 22% Chardonnay. Its golden color suggests evolution on this wine without any added sulfites. The nose brings bright, ripe and juicy Amalfi lemon alongside buttery short crust pastry and crumbly, salty shortbread fingers. The palate is creamily, elegantly fresh, fine mousse is like a salty cloud held within a frame that references maple syrup savoriness, clear blossom honey, and limestone soaked in lemon. Both texture and structure are well apparent on this wine that is delicious now with its incipient evolution but has mileage and stuffing for more bottle age. The rounded, resonant, salty umami finish shows what still is in store, for now still bound up with 2012's vivid freshness. Beautiful. Zero dosage. Disgorged:
November, 2021.
Fleury explains:
“Apply the principles of biodynamics to the cellar” Each year
we select the best grapes from our most beautiful plots in
order to find the most pure expression of the fruit, working
with precision and without the use of added sulfites. A
project managed with meticulous attention to detail by Jean
Sébastien, we now present the 4th edition of this great
endeavor. With a texture of fine bubbles this is an
exceptional Champagne.
An intense golden glow, while streams of fine bubbles form a
delicate mouse. The nose is vibrant with aromas of nature,
fresh yellow fruits with hints of toasted nuts. On the palate
the wine is ample, generous and original. A mineral finish of
incredible length.
