A rare village Chablis that’s entirely hand-harvested, wild yeast fermented and traditionally vinified. And just exquisite.
I like this Dutch review:
A characteristic and briny Chablis with the much-appreciated notes of citrus, green apple and flint. The soils – rich in limestone and fossil deposits – give the wines a distinctive tension and purity. Mineral, tight and fresh Chablis as a result. The domaine is located in the village of Chemilly-sur-Serein, on the outer border of the Chablis appellation. The domaine is run by the Bouchard family, which has been associated with winemaking in Burgundy for generations. Honest and terroir-loving wines.
This was, by the way, direct imported by our wholesaler before the tariffs…which is why it’s still such a tremendous bargain.
This one is the real thing. Which in Chablis now is VERY hard to find.
