The 2019 Côte Premier Cru, 100% Chardonnay from Chouilly, is terrific. Citrus peel, white flowers, mint, white pepper and slate all run through this nervy Champagne. The 2019 builds beautifully with time in the glass before exploding with a bevy of tropical aromatics, minerality and overall intensity on the finish. This is truly stellar. Dosage is 5.6 grams per liter.

The grapes for this champagne come from a Grand Cru plot in Chouilly on the Côte de Blancs, leased by Juliette Alips and her two cousins, Raphael and Vincent Bérèche. The base wines come from various vintages, with 2019 predominating. The Côte Chouilly is made from 100% Chardonnay. Fermentation in the bottle lasted 53 months, and disgorging took place in November 2024. The dosage is Extra Brut at 5.6g/l.
