Domestic local Morel season has finally begun in full swing. We are now buying high-elevation Grey Morels in parts of Oregon, Washington State, and Idaho. The crop started late this year but we expect the domestic morel season to last through August. Production has only just begun, with the season likely peaking within the next several weeks. We are ensuring that we buy only in cold, higher-elevation climates because this is where the bug-free mushrooms are located.
There's much to love about every color Morel, but the Grays are terrifically plump and large, making them wonderful for stuffing, and their double-walled structure gives them an even meatier texture and deeper flavor than their earlier-season counterparts.
Regalis retails these for $60 a pound (which is less than the local restaurant wholesale price of $80). But we can offer them for just $45 a pound.
