2022 Servin Chablis Grand Cru Blanchot

The 2022 Chablis Blanchot Grand Cru, taken from tank as usual, has quite a classical bouquet with sea spray/oyster shell scents percolating through the citrus fruit. The palate is well-balanced with a fine bead of acidity, one of the more elegant Grand Crus from Servin with an approachable, open finish. Very fine, though less cerebral than the Bougros.
2022 Servin Chablis Grand Cru Les Clos
From Vinous:
The 2022 Chablis Les Clos Grand Cru sees more 450L barrels than Servin's other Grand Crus. The nose has a bit more reduction, so the terroir expression is occluded compared to the Les Preuses. The palate is beautifully balanced with a seductive, slightly honeyed texture and traces of orange pith, quince and allspice. It really fans out towards the lingering finish. Superb.
2022 Servin Chablis Les Preuses
From Vinous:
The 2022 Chablis Les Preuses Grand Cru is matured entirely in used barrels, the youngest two years old. The nose has a very appealing sense of cohesion, a subtle grilled hazelnut scent coming through with time. The palate is well-balanced with a slightly honeyed entry, citrus peel and orange pith. It fans out impressively towards the finish and feels very persistent in the mouth. This will tangle with the Bougros for supremacy once in bottle.

2023 Servin Chablis 1er Cru Les Forets
94 Tim Atkins:This is super-classic Chablis with a lightly milky, cheesy nose and a firm, chalky texture. Fine spice, paper ream, wet seashells and pear swirl across the chiselled palate and into the refined finish. These are 39 year-old vines and the fruit sees exclusively stainless steel.
2023 Servin Chablis 1er Cru Montee de Tonnerre

The 2023 Montée de Tonnerre from Domaine Servin is a simply beautiful young bottle of Chablis! As I have mentioned before, these vines range from thirty-five to more than fifty-five years of age and see no oak during their élevage. The bouquet of the wine is deep, precise and vibrant, wafting from the glass in a blend of fresh lime, pear, wet stone minerality, dried flowers, citrus peel and a touch of anise in the upper register. On the palate the wine is deep, zesty and full-bodied, with an excellent core of fruit, a great spine of acidity, superb mineral drive and cut and a long, complex and impeccably balanced finish. This is an outstanding example of this great premier cru terroir and a stunning value!
93 Burghound:
Note: from a huge 2.74 ha parcel in Montée de Tonnerre proper and Pied d'Aloup. An elegant and airy nose freely reveals its aromas of lemon-lime, tidal pool and spice-inflected pear and apple scents. The super-sleek, intense and equally attractively textured flavors culminate in a bone-dry, youthfully austere and sneaky long finale. This could use more depth but the potential is clearly present. I would add that this refined effort is quite classy.*Burghound Outstanding!*
